Based from all of this parameters (See attached) kindly explain the step by step procedure on how to calculate the correct required anchor length. Also guide on how to choose the correct bolt on your catalogue not just the length but also the tfix.

Generally, the total length of wedge anchor is nominal length and thickness of connected parts like shim, bracket, washer etc.
In your present case you have to choose an anchor length which satisfies 116+25+nut height (12mm)+free length (25mm)=178mm length. So, M20x200 anchor will be fine for this.
Regarding anchor diameter, you have to design the anchor for given load and boundary conditions. Thickness of fixture tfix must be less than the one in ETA. but this generally is defined by base plate analysis.
